Paddy’s Bar and Grill has been a staple in the Portland area for over 35 years, not only for the truly impressive selection of whiskey (have you seen our selection?!), but also for the spectacular food. Thanks to head chef, Brendan McCormack, the food at Paddy’s has continued to evolve and be perfected into something an Irishman, like Brendan himself, would be proud of (with Pacific Northwest standards of course)! Sitting down with chef to talk about food, the first thing you notice is his passion for food standards and his love for all things Irish. One of the main things that Chef McCormack says makes Paddy’s food so unique are the high standards put into each individual recipe and dish. Paddy’s specifically “strives for consistency all the time and is focused on sustainable and healthy foods,” just as they were so many years ago in the hills and farms in Ireland. Reading over the menu, you can see that there are twists on classic dishes but all are traditional Irish dishes prepared like they would be in Ireland. We’ve got everything from corned beef and cabbage or the bread and lamb stew, there is even a vegetarian Reuben that will impress even our most avid meat lovers! The food pays respect to Irish traditions while keeping in mind the health-conscious customer yet understanding that our food can be perfect for a bad day, soaking up the two or three Guinness’s you had earlier in the evening, or wanting to feel especially Irish!
